That does not mean technique does not matter. It absolutely does. But the techniques are learnable, and the mistakes are almost always recoverable. Bread is far more forgiving than it gets credit for.
The Four Ingredients That Build Every Loaf
Before you bake anything, it helps to understand what each ingredient actually does, because once you understand the role of each component, you can start making smart decisions when things go sideways.
Flour is the structural backbone of bread. It contains proteins — most importantly glutenin and gliadin — that combine in the presence of water to form gluten. Gluten is what gives bread its chew, its structure, and its ability to trap the gas produced by yeast. Bread flour has a higher protein content than all-purpose flour, which is why it tends to produce chewier, more structured loaves. But all-purpose flour works beautifully for most home loaves, especially softer ones.
Water activates gluten development and gives yeast the environment it needs to do its job. The ratio of water to flour in a recipe is called hydration, and it dramatically affects the texture of the finished loaf. Higher hydration doughs produce open, airy crumbs with large bubbles and thin, crisp crusts. Lower hydration doughs are denser and easier to handle. Starting Simple: A Reliable Everyday Loaf
If you have never baked bread before, the best place to start is a simple white sandwich loaf or a basic rustic round. Here is a foundational approach that you can return to again and again as your skills develop.
Start with 500 grams of bread flour or all-purpose flour. Add 330 grams of lukewarm water — not hot, not cold. Water that is too hot will kill your yeast, and water that is too cold will leave it sluggish. Aim for something that feels comfortable on your wrist, roughly 95 to 100 degrees Fahrenheit if you want to measure. Add 7 grams of instant yeast (or active dry yeast that you have first dissolved in a bit of the water), and 10 grams of salt.
Mix everything together until no dry flour remains. At this stage, the dough will look rough and shaggy, and that is exactly right. Cover the bowl and let it rest for 20 to 30 minutes. This resting period, called autolyse, allows the flour to fully absorb the water and jumpstarts gluten development without any kneading at all.
After the rest, begin kneading. You can do this by hand on a lightly floured surface for about 10 minutes, pushing and folding the dough repeatedly until it becomes smooth, elastic, and slightly tacky but not sticky. Or you can use a stand mixer with a dough hook on medium speed for about 6 to 8 minutes. You will know the dough is ready when you can stretch a small piece thin enough to see light through it without it tearing — this is called the windowpane test, and it tells you that the gluten is properly developed.
Place the dough in a lightly oiled bowl, cover it, and let it rise at room temperature until it has roughly doubled in size. This typically takes one to two hours depending on the temperature of your kitchen and the activity of your yeast. A warmer kitchen speeds things up; a cooler one slows them down. Both are fine.
The Rise: What Is Actually Happening in the Bowl
During fermentation, yeast is eating the sugars in the flour and releasing carbon dioxide. That gas gets caught in the gluten network you developed through kneading, and the dough expands. At the same time, enzymes in the flour are breaking down starches and proteins in ways that develop flavor. This is why dough that ferments slowly — whether because of a cooler temperature or a smaller amount of yeast — tends to taste better. Time is an ingredient in bread.

After the first rise, you need to shape the dough, and this is the step that tends to trip people up. Shaping is not just about aesthetics. A well-shaped loaf has surface tension built into its structure, which helps it hold its form in the oven and rise upward rather than spreading outward.
Gently turn the dough out onto a lightly floured surface. Press it into a rough rectangle or circle, depending on the shape you want. Fold the edges toward the center, then flip the dough so the seam is on the bottom. Using your hands, drag the dough across the surface while rotating it — this creates tension on the outside of the loaf. You want it to feel like the surface of the dough is pulled taut, like a drumhead.
Place the shaped loaf seam-side-up in a floured banneton (a proofing basket) or seam-side-down on a parchment-lined baking sheet. Cover loosely and let it rest for 45 minutes to an hour and a half for the second rise, called proofing. During this time, the gluten relaxes and the yeast produces a bit more gas, giving the loaf its final shape before baking.
You can test whether the dough is properly proofed by pressing a floured finger into it lightly. If the dough springs back quickly, it needs more time. If it springs back slowly and partially, it is ready. If it does not spring back at all, it may be overproofed — slightly overproofed dough still bakes up fine, just with a denser crumb.
Baking: Heat, Steam, and the Magic Crust
Getting the crust right is largely a matter of managing steam in the first part of baking. When you put dough in a hot oven, the steam that comes off the loaf keeps the crust pliable, allowing the bread to spring upward dramatically in the first 10 to 15 minutes — this is called oven spring. After that, you need to let the crust dry out and crisp up.
The easiest way to manage this at home is to bake your bread in a Dutch oven. Preheat your oven to 450 to 500 degrees Fahrenheit with the Dutch oven inside. When you are ready to bake, carefully lower your shaped loaf into the Dutch oven, score the top with a sharp knife or bread lame (more on this in a moment), put the lid on, and bake for 20 minutes with the lid on. Then remove the lid and bake for another 20 to 25 minutes until the crust is deeply golden and the bottom sounds hollow when tapped.
The lidded Dutch oven traps the steam released from the dough itself, creating the humid environment you need for good oven spring and a thin, crackly crust. It is the single biggest improvement most home bakers can make to their bread.
If you do not have a Dutch oven, place a pan of boiling water on the bottom rack of your oven when you put the bread in, and remove it halfway through baking. It is a less precise method but still effective.
Scoring: More Than Just Decoration
Scoring the top of a loaf before it goes in the oven serves two purposes. It gives the expanding dough a place to open up in a controlled way, preventing it from bursting randomly at the seams. And yes, it also makes the loaf look beautiful.
You can score with a sharp serrated knife, a single-edge razor blade, or a purpose-made bread lame. The cut should be confident and deliberate — a hesitant score tears the dough instead of slicing it cleanly. For a simple round loaf, a single curved slash or a cross works well. For a batard (an oval loaf), a long diagonal slash or a series of smaller ones gives a lovely ear.

Troubleshooting Common Bread Problems
Dense, heavy bread is usually the result of underdeveloped gluten, underproofing, or yeast that was not active. Check that your yeast is fresh (a packet of active dry yeast foams visibly when dissolved in warm water with a pinch of sugar — if it does not foam within 10 minutes, the yeast is dead). Make sure you are kneading long enough and letting the dough rise until it has actually doubled, not just puffed a little.
Gummy crumb despite a cooked exterior often means the bread was not baked long enough, or was cut too soon after coming out of the oven. Bread continues to cook and set as it cools, and cutting into a hot loaf releases steam that the crumb needs to finish setting. Wait at least 30 minutes, and ideally an hour, before slicing.
A crust that softens quickly is usually a humidity issue. Let the loaf cool on a wire rack rather than a solid surface, which allows air to circulate around the bottom.
Loaves that spread flat instead of rising up almost always need better shaping or a longer cold proof to firm up the dough before it hits the heat.

Once you are comfortable with a basic loaf, the world of bread opens up enormously. Enriched doughs — those that contain butter, eggs, or milk — produce tender, pillowy results. Brioche, challah, and milk bread all fall into this category, and while they require a bit more patience, they are deeply satisfying to make.
Sourdough is its own universe, built on a living culture of wild yeast and bacteria that you maintain and feed over time. Sourdough is slower, more unpredictable, and more flavorful than commercial yeast bread. It rewards attention and patience, and once you understand the basics of fermentation and shaping, the transition to sourdough is less of a leap than it seems.
Whole grain breads, rye breads, focaccia, flatbreads, bagels, baguettes — all of these follow the same fundamental logic you have already learned. Different hydrations, different fermentation times, different shaping techniques. But the same core understanding of flour, water, yeast, and salt applies to every single one.
